I'm getting ready to start day 2 of my restaurant consultation.
We are going to spend some time doing market research this morning- taking the family, baker, chef, and prep cook around to other local restaurants that have similar qualities.
The idea is to give them motivation- by looking at what certain chains accomplish with less quality, we hope to give them an idea of what they can accomplish.
This place (B&B Empire Bagels) has the ability to make such quality food with love- everyone loves a Mom and Pop place!
We'll see how it goes... More later!
